Pecan Stuffed Dates

Just three ingredients – pecans, dates, blue cheese – and you’ve got yourself a quick and easy vegetarian holiday appetizer.

Ingredients

12 Medjool Dates

6 ounces blue cheese, cut into 12 pieces

12 pecan halves

Process:

  1. Use a sharp knife to split dates down one side, but not completely in half. Remove pit and discard. Place one piece of blue cheese and one pecan half in each date. Serve. Makes 12.
